Bulgaria has been seen in its true light since it entered the European Union. In this small Balkan country Greeks and Romans brought in and developed the culture of the vine.
We rediscovered this little country 15 years ago and more people are appreciating the quality of flavours imparted by oak and acacia barrels we made.
The climate is favourable for coopering wood
Thanks to a continental climate with hot, dry summers and frosty winters, trees grow slowly and provide very thick wood.
As a result there is an exchange between the wood and the wine that takes longer.
Two fortunate consequences :
- - high level of fruitiness
- - long-lasting barrels
Some information about 2005-6 vinifications
Acacia allows very nice vinifications of dry white wines. Excellent results have been observed and confirmed for sweet wines.
A comparison between maturing a red wine Malbec 2005 in acacia and in oak barrels has shown up the fruity contribution of the acacia and blending both wines creates an interesting complexity.
We have received very positive feedbacks about rosé vinifications in acacia barrels from the 2006 harvest.
